This comprehensive 600 page book showed me in detail how to set up, operate, and manage a restaurant business. The author covers everything there is to know about the very risky business of running a restaurant.

As a caterer looking to open a restaurant I also found the book very helpful. I didn't need recipes or help in sales - I needed help in running the financial aspects of my business.The chpater on computers was very helpful as well.The book is very easy to read and understand. Complicated accounting subjects are simplified, easy to understand and ( almost) fun to apply.

The books nineteen chapters cover the entire process of a restaurant start-up and ongoing management.The companion CD rom which contains all the forms is worth the modest price of the book alone. I would highly recomend this book to anyone in the industry now or who wants to get started with sound financial planning. Also the extensive resource guide in the back of the book helped me locate a manufacturer I needed a part from - I will use this book often.

This book has a lot of information, however it does not go into great detail for those who are familiar with the principals listed inside but are looking to expand on those ideas. If you are an experienced restaurant manager or owner, this book is a waste of money.

This book helped me a tremendous amount getting through the national certifation exam. Every three years we have to up date our certifation in California. I also purchased the Study Guide for the National Servsafe Exam: Key Review Questions and Answers with Explanations ISBN 0971999678 which is also on amazon. This book covers all levels of food safety. I highly recommend it, especially if it's your first time taking the course or exam.

I read this book knowing I was not going to learn any new and cheery anecdotes about how Ronald McDonald got his start..... instead I read this to solidify the notion that fast food was not a healthy choice. And boy, did this book give you reasons it is not, and I'm not just talking nutritional value here.

I found this book fascinating for the detail was great, well researched, and given to the reader straight. It was an eye opening book. Who knew that due to the meat industry being run just by a few corporations, essentially we are eating the same meat from the same feedlots and slaughter houses whether we buy it at a fast food chain or the local supermarket, and perhaps even the nicer restaurants. I also found some of the content appalling. Cattle are fed cats, dogs, other cows, even old newspaper! If this doesn't outrage you enough, just wait to you get to how these same meat conglomerates treat the low paid, low skilled employees of the slaughterhouses.

This book is insightful and unbelievable, and will make you question how the fast food giants sleep at night.

I've been trying to write a review for this book and end up not being able to grasp the profound effect it has had on me. I'm left will a feeling of being too small to actually do anything about the "wool" being pulled over America's eyes. From basic human rights to our nation's safety (e.coli, salmonella, etc.), the fast food industry has been able to break laws, cover up incidents and some how flourish, making billions of dollars a year.

I devoured this book, it is easy to read, accurate and eye opening. The contents in this book is something that every American should be familiar. Fast food customers need to be informed of what goes on to deliver that "happy" meal on to that plastic tray from beginning to end. I'd like to thank Eric Schlosser for writing this book, his research has caused me to take a look at what I'm supporting and risking by consuming meat. I for one will not support these arrogant corporate giants and have chosen to stay away from fast food. I have seen the light and it's not from the glowing golden arches down the street!

Since many other reviewers cover the more repulsive details of Schlosser's book, I will stick to pointing out something I think deserves even more attention: one of the themes of the book is that the fast food industry has its tentacles in EVERY aspect of Americans' lives. Changing this goes far, far beyond bypassing a Big Mac...boycotting fast food is not the same thing as boycotting the fast food industry, when industry practices have made the USDA powerless against meatpackers, advertisers target children as consumers, and schools are taking money for corporate sponsorship.

This a fantastic book and it touches on a lot of areas that I don't normally think of relating to fast food, such as the plight of abused migrant workers in the slaughterhouses and the economics of teen labor. Everybody should read it, even if you never eat fast food, because you're affected too.

I must warn the reader that you'll never want to eat fast food again after you read this book. I've never been a big fast food junkie, though I've eaten it if there isn't anything else around, but I won't again take a bite of the same even if I'm starving during a road trip and the only food available is a drive-thru burger joint. Eric Schlosser's book is an impressive, albeit disturbing dissection of the fast food industry in the United States, one that examines each aspect of said industry with unflinching, well-researched facts. The result is an unflattering picture of an industry that has changed US business and eating habits in an almost secretive fashion. The book is a fascinating look into the business and talks about the process of hiring, franchising, purchasing and other practices. The most fascinating and disturbing chapters concern, however, the beef served at fast food restaurants and how it gets there. I warn you that it is not a pretty picture. If you care about the food you eat, these chapters will sicken you. You must read this book (unless you never eat fast food at all). The quality of the food aside, this book is extremely critical of the fast food industry and I believe that if you are a fast food lover, this book will disturb and upset you. As I said above, the picture Schlosser paints isn't pretty, nothing is sugarcoated. This is well-researched and well-written book and I highly recommend it.

4-0 out of 5 stars An insightful read - much better than the typical CEO tract
I was pleasantly surprised as that number of insights I picked up in Howard Schultz' tale. He and Dori Jones Yang really appeared to have connected in the writing of this book. There's an effortless flow in the telling that gives you a 'fly on the wall' insider's feel without getting bogged down in coffee arcania or management dribble.

Schultz walks you through some of the thought processes and actions that led to important advancements in Starbucks' success with their customers. And, he's not afraid to point out when he's been dead wrong. He's strong enough to admit being dead set against the Frappuccino & totally missing the boat on what ended up being a blowout product for the company.

One comment - it's hard for me to reconcile Schultz' recent fixation on the Internet, going so far as ruminating about buying Williams-Sonoma for its online potential, with the clear-headed thoughts expressed in this book. [Yes, let's see...I'll have a latte and this leather couch, thanks.] Throughout the book, Schultz shows a complete understanding of a company's need to please Wall Street via growing profits, and also is quite clear of having to evaluate each decision by asking "Will it strengthen or dilute the brand?"

5-0 out of 5 stars You will never look at Starbucks the same way again
This is one of the best business biographies I have ever read. It is truly inspiring. One simple, and telling, output from reading this book on a plane was that as soon as we landed I headed to the local airport Starbucks for a latte. I rarely even drink coffee! So powerful are the imagery and the passion for coffee in his story that you can almost smell the roasted dark beans, feel them running through your fingers, hear the sounds of the espresso machine and taste the coffee itself!

Why is this imagery so important? Because behind the corporate image of a relentless pac-man like machine churning out new locations at a rate slightly above the national birth rate it seems, is a simple vision of passion for coffee combined with Italian neighborhoods and a warm and friendly place where the worlds best coffee and social friendship intermix. That is what Starbucks was all about.

The book itself is a remarkable insight into this journey. It was even more special for me, as I grew up with Starbucks - literally. When Howard talks about the vision he had to treat even his part time employees with full benefits and ownership in the company through stock, I know it was more than just a nice sounding corporate manta, it really worked. Friends I went to high school with in Bellevue in the mid to late 1980's worked at the first stores, and raved about this little coffee company and couldn't imagine working anywhere else. So, from firsthand experience I can tell you that what he says about the passion and vision coming to life in Seattle is all true

While company history is quite interesting, and the book itself just hums and glides without ever getting mundane, the real gems are in the emotional reality Howard displays. He talks about being overwhelmed to tears, about the rejection he faced while trying to get funding for his fledgling company, about the naysayers and others who nearly took it all away, and the struggle with having a hand in everything and slowly letting go. You know that you are reading about a real person, someone who came from a poor neighborhood in Brooklyn with working-class roots, not an image generated by a large corporations PR spin doctors

The value of people, so often lost in corporate bureaucracy, is evident here. Starbucks grew because it struck an emotional chord with people. He knew that in order for the company to be successful he needed people who shared the values. This is often spoken of, and rarely practiced in the corporate world where systems, forecasts, processes and other such tools become the focal point, and the simple fact that all results come through people is lost. He speaks throughout the book of people who helped him, coached him, mentored him, challenged him, and made the company what it was. One quote in particular summarizes his views: "If people relate to the company they work for, if they form an emotional tie to it and buy into its dreams, they will pour their heart into making it better." (Page 6) This theme comes through in every decision.

Overall, this is a wonderful book, and is truly inspiring. I would work for him tomorrow, if it really still is the way it's portrayed here. I encourage you to read this book and see your neighborhood Starbucks in a new light.

This is an interesting read if looked at as a fictional account of business. As a frustrated Starbucks employee, there are many an urban legend about how great we are supposed to be treated. Howard should go to work as a barista in one of his own stores, have customers insult him, throw drinks back at him and do all of the cleaning chores expected of the people making him his millions. As for the "One Drink at a Time", I wish that were true. We are expected to whip out drinks within mere seconds of them being ordered. Don't believe all the gospel of Howard. It ain't all that he thinks it is cracked up to be.

I view this book as one of the essential resource books any serious cook should have. If I had named it, I would have called the book "On Food" because it is not just about cooking food, it actually gives you encyclopedia type entries to describe an enormous number of items in each chapter (e.g. fish, vegetables, meats). It will tell you where your food came from, in which seasons it is freshest, how best to prepare it and will follow each of these up with a number of recipes. Do not look to this book to be a cookbook, though. Is is more important to view the book as a resource to help you figure out the best types of preparations for that item you found at the market but have never used before. It is a great tool to just sit down and learn about cuts of beef and why some parts of the animal are great for one type of preparation versus another. That said, there are recipes and they are good, but to focus on them would be to overlook all of the education you can get from this book. This is used as a textbook in cooking schools, and the set-up is like a textbook, but a lot more interesting than the ones you had in college or high school because you can eat after you learn.

I'm a culinary arts student at the Art Institute of California, and total foodie, and I take my cooking very seriously. This book goes into explicit detail for each and every ingredient and cooking method. I'm not kidding when I tell you that there are three paragraphs and a chart to tell you how to boil water. That may seem like overkill, but now that I've been following the various guidelines of food preparation, I notice a subtle improvement in everything I make. If you're the kind of person who walks down the spice aisle of the grocery store for fun (like me!), or if you can't get enough kitchen gadgets (like me!) then you'll enjoy this book. Caution: don't read this one on an empty stomach!

Another great book is the Study Guide for the National Servsafe Exam. This book has excellent questions along with answers and explanations to help you get through your classes or to pass the state exam. There is not one page of information in this incredibly handsome book that is not useful. The book includes every possible form I can think of, and many many more I never thought about which would be incredibly useful to our business today! Whether one is cooking in a restaurant or a school kitchen, this is the most valuable handbook. You'll want it at ready reference. I know, because never a week went by that I didn't consult it while running my bakery/deli in the Oregon Cascades.

I must confess that I didn't tell customers my recipe source. I preferred they think me a genius or as having come from a family steeped in cooking history. They knew I was no genius (hell, they knew I wasn't even very smart) but they did like the foods we provided. And, when I decided to produce a new, tasty meat pie, it was this book that I consulted to improve upon my concept.

Choose not to buy this book and you probably are never going to know what you don't know. Choose not to consult it while it sets on your shelf will probably endanger your relationship with your harshest critics.

I discovered this book several years ago while working as a hall director for a cooperative living residence hall. The college women who lived there cooked for their fifty housemates.

Molt's book was a godsend for us; the instructions were basic, easily understood, and useful.

The best aspect of Food for Fifty is the fact that, recipes aside, the book gives excellent tables and instructions for cooking times/weights/quantities beyond the recipes it lists. In other words, it is quite useful when adapting one's own recipes to meals for 50 or 100 people.

I have since used Food for Fifty in another food service job, where it was equally useful and well-received. I highly recommend it to anyone, whether you're doing institutional meals, church meals, or simply work with large food quantities on a regular basis. It's worth it!

Unfortuately, this book has a limited number of fish and chicken recipies and the ones it does have, aren't very healthful. It does have more of a selection for meat recipies. I returned the book.

Most referance books I use in my job (I am a cook) does not go into detail how to use math to compute how much to use or how less to use according to scale. Examples and explanation makes it so much easier to understand what is required to do the proper job. I love the equilivants of which items which could be compatable to food items. My only complaint is that sections to find measurements to total needs to be more organized to make it easier to find in the tables. At my job, this book really is considered a "bible" and I'd buy it for my own personal use!

The tables provided are worth the price alone but the basic recipes are invaluable. They can be adapted to different requirements. Quantities, particularly vegetables, are somewhat conservative compared to what I find needed but the age of the "fifty" (or 100)and their physical activities make a difference. It is the general guides - cooking temperatures/times/specific cuts of meats/yields of purchased bulk versus usuable portion that I find myself referring to over and over. This is also what is missing or reduced in other similar books. I have used a number of the baked goods recipes and find them all to be excellent. Seasonings are very low in most recipes but that is easily remedied - especially spices in the sweet breads and desserts and herbs in most dishes. They need to update that which I hope to find reflected in the newest edition. This book would be a great resource for any type of small catering company, restaurant with changing menu, or institutional food service. ... Read more

We are opening a coffee house in 4 months and, needless to say, I have been reading and researching tons of books. Not just on the coffee world, but on insuring a small business as well as other legal insights. This book has been a HUGE resource for our venture. It is an easy read, meaning, it doesn't numb your mind for countless pages discussing, say, insurance. Let me add that it does talk about insurance, and I thank the authors for that. They explain complicated business talk with clear and consise examples. They also tend to weigh situations against other situations. For example, when drawing up the plans, they give you three ways of doing it (yourself, a draftsman, and an architect) and explain the pros and cons of each. This is consistent throughout the book and they go on to explain why or why not certain things work. They discuss marketing, staffing and the interview process, equipment tips, design layout, decor, etc. This is obviously written from the stand point of people who have been there. They cover all the bases about getting your shop up and running while touching on some potential pitfalls and how to avoid them. And if you get in a bind, they discuss how to get out of it. My highlighter has gotten a workout and I am passing this on to my co-owners to read. I am grateful to have found this book and only wish I had found it sooner to save money on the previous "coffee house" books I have purchased. This book exceeded my expectations as it went beyond the basics and truly is the only book you'll ever need. I was impressed to see that they covered LLC's, C corporations, and, S corporations...where people can't sue and go after your homes, bank accounts, personal assets, etc. Our attorney recomended an LLC for our type of operation and I was relieved to see that this book brought the topic up. Thanks to the authors for being the most complete work out there (in my opinion) on starting your business THE RIGHT WAY from the start.

I found "Start and Run a Profitable Coffee Bar" an excellent book for restaurant novice such as myself. I have operated a business but not a restaurant or coffee shop. This book is excellent. It provided many different forms which would be useful in running a coffee bar. The book also included in an appendix coffee organizations and suppliers, helping the novice tremendously. I would definitely recommend purchasing this book if you are interested in starting a coffee bar or shop.

This book did not really come up with anything that one can not find at the public library or the internet. It tells you about the good things that you would like to hear and thus painting a rosy and an unrealistic picture. The information is somewhat general, and for the most part not realistic and/or outdated. In short, it's not worth the money.

This book was absolutely wonderful! I did not want to put it down. The authors put a lot of thought into what you should know about opening and running your new or already established coffee bar. Very detailed! I wanted to run out and open my business right after I read this book. :-) But, research, research, research will have you better prepared. It wouldn't hurt to have this book under your arm the whole time either!

A Chowhound's Guide is a tremendous resource for everything from upscale to hole-in-the-wall restaurants but the focus is on GOOD FOOD!

It's much hipper and more up to date than Zagat's!

The layout of the book at first appears to be a little chaotic but you quickly get used to it sorta of like the Chowhound.com web site, from which this book is distilled.When you think about restaurant guidebooks no order is really sufficient whether it's by restaurant name, by cuisine, or by neighborhood.But this book has one ofthe best indexes for finding what you want - the index alone is over 100 pages.

In addition to being an excellent restaurant guide - it's a great read!

The book is great and the most updated on the subject - but the CD rom included with the book is superb and a very nice added bonus! It contains a full 50+ page business plan in Word for easy editing with financial statements, over 50 customized forms for your use in PDF format, and a check list of thousands of items you need to open - these are all bonus items included on the CD ROM !!!
We have looked at other business plans and software and all were over $100.00 - this is a great value - my only comment is the book is so packed with info. the type size is a little small for my aging eyes...
