I have bought and read 5 different books on hospitality and marketing in the last 12 months alone. And while most books contain good information, this one truly tells you what you need to know. Reminiscent of Ogilvy and Caples, with a twist for the new millenium, and in the context of hospitality and travel, but avoiding puffery, he makes sure you are using your marketing to produce results and not waste any money. He provides enough detail about key marketing actions...from advertising to public relatsions...to branding...to promotions...to loyalty marketing and working with travel suppliers. He even has an entire chapter devoted to managing the marketing budget and how to maximize your dollars...I can't remember another marketing book that does that. This is great for anyone who needs to manage the process, which is what most of us need. I'm not the one creating those ads or brochures, or taking those pictures, but I sure as hell need to educate myself on the process so I can manage well and make educated decisions and this book does exactely that. And if you are new to the business and look to enter hospitality this is a great book to tell you what it takes to fill a hotel and attract guests.

As a hotel marketing and PR manager I was expecting "Heads In Beds" to be a revision of some old and well known topics. But, surprisingly, it is fresh, interesting and contains a wealth of useful information and colourful examples. The progression of covered material is logical and the fourteen chapters are well researched. The author draws from personal experiences and the focus on branding throughout the text is very helpful. I recommend it.

Loved it: a no-BS book providing solid advice. Chapters on advertising, branding and creating brochures should be required reading for anyone in marketing and advertising. The Loyalty marketing chapter is fantastic. Marketing to travel agents very complete.

I found this book got right to the core of starting a Restaurant in a logical and easy to understand way. It contains a useful model for a restaurant business plan, and includes practical approaches to tasks that must be dealt with in a restaurant start-up. It also suggests ways to cope with if not avoid many typical problems, and presents numerous strategies for increasing chances of success. Very helpful.

A MUST READ if you want to increase you chances of success in the restaurant business. Lots of useful information on every page, and easy to read. Covers all aspects: site selection, menu planning, equipment selection, layout, staffing, purchasing food and beverages, cost controls, management tips, quality control, service, sanitation, safety, plus business plan and legal considerations. It's all there. After you read it, you'll want to keep this book for future reference and ideas.

I've been told that 80% of new businesses fail within their first five years. I can't afford to take that chance. That's why I'm getting all the help I can get to succeed in the restaurant business. And this book is helping me a lot. Every time I flip a page and see something I didn't even think of, or spot a costly mistake I would have made, I'm glad I bought it. It's easy to read, easy to understand, and covers every phase of the business from planning to the grand opening. Good examples and checklists. I give it five stars.

After reading a friend's copy, and seeing how useful this book is, I had to buy my own copy. I read it again and still refer to it for ideas. It covers the entire process of a restaurant start-up in an easy to understand way, pointing out ways to increase your chances of success and showing how to avoid many common mistakes that can doom a start-up. While showing you how to go about it, and giving examples, the author leads you through a winning business plan, menu planning, service system development, equipment layout and planning, cost controls, ways to satisfy customers and build sales, personnel planning and management, as well as a lot of common sense tips and useful guidelines. I believe this is a valuable book for anyone, who is starting-up a restaurant, to read. Good Luck.

This book gets right to the point, and is written in an easy to read and understand style. It covers all aspects of the business and gives a lot of good examples and strategies for dealing with situations. This book was a disappointment. I found it to have several chapters of vague generalities and typical small business boilerplate that I don't want to pay for.

It definitely does not give me the information I need to know to start a tour operator business. The most important example of it is it simply says nothing whatsoever about insurance and how to protect yourself from liability. That in itself should be an absolute condemnation of the book.

The only reason I didn't give it 1 star is it says a bit about how to guide a tour, which someone might find slightly useful, but overall, the book is not worth buying.

Yesterday my staff and I celebrated the one year anniversary of my restaurant. The Restaurant Start-Up Guide was an integral part of my planning process, and I have recommended it to three other friends this year who are starting their own businesses. The month-by-month approach was not only motivating; it lent structure to a sometimes overwhelmingly complicated process. My previous experience was in hands-on restaurant management. The Start-Up Guide taught me the business basics and directed me to other sources of information I needed to get started. I will continue to recommend it to others in the future.

This book is absolutely useless other than for academic interest. If you read the bios of the authors carefully they have never started or run a restaurant and that reflects the writing. The whole book is about marketing, planning, spreadsheets; something that would be taught in a college classroom. I really wasted my money on this book.

This is both an interesting and boring work, due to the insights shared from Charlie Trotter's success. The boring stuff is the repitition of common-sense advice which everyone knows but few implement habitually. This is what separates the mediocre from the excellent.

Trotter maintains an atomosphere of excellence, from his hiring practices to discipline to innovation to publicity, etc.

One can certainly take much from this work to ponder about possible adaptation for one's own enterprise.

As a big fan of Trotter and his innovation and creativity, I was excited to read this book. Unfortunately, it's just not very good. Mr. Clarke uses a notion or two per chapter that Trotter has applied as a successful entrepeneur, then boils it down, oversimplifies it, and creates tedious little pop quizzes of the "rate yourself" variety. It's as if he doesn't know whether he's writing a do-it-yourself workbook or a study of business. Clarke's very intrusive and heavy-handed, and this blunts the force of the good observations he does make. All in all, Clarke's interpretations of Trotter's wisdom lack the ring of authenticity of someone who's actually done what he espouses. This would be a lot better if it was actually Trotter doing the teaching.

I happen to find this book very interesting. It gives you some insight as to how Charlie Trotter runs his restaurant in Chicago. For anyone who knows of this restaurant, you will know how successful it is and how much pull Charlie Trotter has in the restaurant business. This book won't teach you how to become a better person in life, but what it will do is teach all of us how to be more effective in the workplace. We all think we know the best way to run a business, but the truth is you can't do any of it without a great team of minds to assist you along the way.

This book was very informative. I, for one, always wanted to know some of the secrets myself about this place. The restaurant hardly ever drops the ball when it comes to providing a great dining experience.

This book would be great for managers, VP's, and directors of any company. Not just the restaurant business. It explains how to treat your workers with respect and how to also tighten the ropes when you need to get things accomplished sooner than you already are without killing the integrity of the worker.

All in all, a really good book. Buy this if you are a fan of the restaurant or would like a good idea of how the place has run over the last 12 years.

I found the book to be void of any new leadership "Lessons" and to be particularly skimpy on any real "Lessons from Charlie". Ok, so someone leads each guest to the restroom and checks to see that it's in order and his servers wear double-stick tape on their shoes. But other than those two specifics, there's just no Charlie Trotter flavor to the book. (And, I'd personally be totally uncomfortable having someone follow me to the ladies' room every chance I got up. Can't they straighten the room on someone else's time, not while I'm waiting to use it?)

The book talks about Trotter's passion, but fails to explain or illustrate his inspiration and execution. The book is dull, with no feeling for the fire that incents Trotter. I'd love to know how he goes about changing the menu every day. There has to be a process to his creativity, not just the outcome. But we're left with nothing.

For the first time in my life, I threw the book away. There was no one I could imagine who would be willing to waste the time I had on the book. ... Read more

Let's imagine you are thinking about buying that espresso stand down beside the street corner near your home. "Hmmm....wonder if that is a goldmine waiting to be mined?"

If so, this book is an adequate first step in your research. It touches a wide range of topics with a scientific, by-the-numbers approach. Therein lies the fault.

You see, entrepreneurship is not a science. It is an art. So, too, is service and great coffee!

This book was useful for a few things for the absolute beginner (which I was when I read it), such a lists of supplies, questions to ask potential suppliers, and some basic info about how espresso machines work, plus the vocabulary to go with them, but beyond that was filled with a lot of not-so-helpful filler. It focuses too much on espresso carts considering it didn't represent itself as being for that (if that's what you want to do, it'll be more helpful) and even goes so far as to be condescending at times - reminding you to be polite in challenging a demonstrator to pull a better shot of espresso if the first one is lacking. Overall not a complete waste of money, but definitely not something I'll be referring back to.

This book barely skims what you will need to know to open a specialty coffee establishment. If you are interested in opening a cart or kiosk or are just toying with the idea of opening an espresso establishment; then this book is a good starting point. I love this book! I travel every week and I always find the packing for the trip to be the worst! I absolutely dread it each week. This book helped change that!

The different checklists are great for getting organized AND making sure that you pack every thing you need for your trip.

The bundling system is so incredibly simple and easy... with no wrinkles once you arrive at your destination.

The last part of this book is chock full of good reading on how to pack those bulky items such as shoes and winter sweaters and coats.

With all the security requirements with the airlines now (and tough limits on carry-ons), I really recommend this book... and I'm a road warrior that should've figured out how to pack by now!

Although I've been traveling and packing for years, Judith Gilford's guide gave me several new ideas for packing light. I recognized myself in the traveller who thinks he must take one of everything...as if stranded on a desert island.

There are lists for traveling with children and teens as well as sections on traveling to various terrrain and climates. Lists are provided to assist you in packing thoroughly, but wisely. A handy guide helps with the invariable stains you'll obtain while noshing, trekking and exploring.

There is a section with faq the writer has received in her packing seminars as well as tips from readers/customers such as wearing-rather than lugging-your heaviest outfit, coat or sweater and shoes. A reference chapter gives ideas on wrinkle shrugging fabrics as well as a valuable resource guide for items mentioned in the book, and companies that provide luggage, clothing and accessories.

With Gilford's bundling system, it is possible to pack for a week's travel in a carry-on bag, with minimal wrinkling and no need to check luggage. I will incorporate many ideas given here into my not-so-shabby current travel savvy-I would recommend this book to the beginning and experienced traveler for the warm and sage advice. ... Read more
