Once again, Anne Willan brings us a cookbook that is clear, easy to use, and great for impressing others. I would put this book on my list of "company cookbooks" - for when I want to entertain and revel in the compliments of what a great cook I am. Anne's cookbooks are well known for being easy to follow and full of beautiful photos that make the directions clear. It is not impossible to get results very close to the photos. Some recipies are packed with red meat or heavy cream, so if you are watching what you eat, pick your recipies carfully. I first picked up a review copy of the original MtoF cookbook when I worked in a bookstore and found it one of the most well-written, creative, practical, consistently good cookbooks I have ever used. I bought the Pasta book for my husband when he was learning to cook -- We both love it!!! Michelle Urvater provides a wide variety of recipes and always has suggestions for playing with ingredients and what to do with leftovers.

I recently bought a handcrank pasta machine and was on the lookout for a pasta cookbook that had recipes using fresh pasta. My mom surprised me with this book and I absolutely love it! I love cookbooks with lots of pictures so I can see what the recipes look like. This book has a picture of every recipe so I am in cookbook heaven! Lots of great recipes too! Buy it for yourself or give it as a gift. Two thumbs up!

A very helpful book, well organized, and full of recipes from the easy to the more complicated. Everything can be done in a reasonable amount of time if you adhere to the star method to choose your level of complication (one star: easy; 2 stars, a little harder...). This is a favorite of those who've tried the dishes, though a little more careful editing would have been welcome (for example, in the recipe for Ziti with Vegetables and Italian Sausage, why is there no sausage in the recipe? For the times you must create a b├ęchamel, why not mention that you return the sauce to a medium-high heat and not the low heat you were just using?). I won't be picky: this is a great pasta book. One caveat: if weight watching is an issue for dishes you prepare, keep looking - these recipes are mostly quite high in the calorie department. However, if you're looking for a good general pasta book, try this one first and wait before buying others; this one supplanted most of my other pasta cookbooks, and it may for you, too.

This is a fantastic cook book!!! I love cookbooks with pictures and this one if filled with them. I got this cookbook after I bought a pasta machine so I could find some sauces to serve with my homemade pasta and I certainly wasn't disappointed. I have tried several recipes already and found them easy to prepare and they turned out great. I highly recommend this book. You won't be disappointed!

Wow, I thought I had pretty much seen all the great cookbooks out in the market. Boy I am so pleased by this book. It is very well organized, with catagories, such as pasta with meat, chicken, vegetable, etc. I was pleasantly surprised with the gnocchi section, as it is hard to find great recipes with pictures for this topic.

If you are searching for a great book that will satisfy both your palate and mind, this is the book to have.

BTW, the paperback version comes with a plastic cover. So no worry about ruining the cover during cooking. A++++ !!! ... Read more

Most pasta books seem to spend a chapter on origins, a chapter on equipment and one little page - or less - on "basic" dough (usually with all purpose flour and eggs) and then fill the rest of the tome with sauce recipes. All well and good, but if you're looking for more, this book is one to consider.

While his basic recipe is the all purpose flour, egg and water recipe you will find in most books, he does include a section on making spinach pasta and another on using pasta secche (dried store bought made of semolina flour).

Mr. Bruno takes you step by step through the use of a manual pasta machine, rolling pin technique, several ravioli making methods, gnocchi, cappelleti and tortellini. My book (paperback, 1981) has black and white photos, but good quality such that all critical steps are well illustrated.

There are pasta sauce recipes and thankfully very little filler about the history of pasta, who first started using pasta, blah, blah, that you'll find in some other books. As Mr. Bruno puts it "This is a cookbook, not a history book...". Amen.

If you're in the market for a book on pasta making, I highly recommend this one for a good basic course. Thankfully, it is still in print (as of this writing) and easy to get your hands on. ... Read more

This is a first-rate cookbook. It satisfies two essential requirements: (1) nearly all of the recipes are amazingly simple; and (2) the results are fabulous, tasting far more complex than the simplicity of the recipes would lead one to expect. The artwork is colorful and pleasing, and the authors' many anecdotes about about their eccentric Italian-American relatives are amusing. This is, quite simply, the best cookbook I own.

Out of a selection of nearly a dozen books on Italian cooking, Penza & Corsi's book steps forward with a friendly smile and warm handshake. No airs, no yuppie insistance on unknown ingredients rise up to cow the cook. If some ingredients aren't always available, Penza & Corsi tell you what to do instead. They make new recipes easy in every respect--not because they're overly simple, but because the authors make them seem so. The results are delicious. By all means, try it!

Coming from Long Island, New York, I grew up on southern Italian cooking and I am still a great fan of it. I brought "Sician American Pasta:99 Recipes You Can't Refuse" a few years ago and it turned out to be one of my best buys in cook books. This is because there are so many excellent recipes packed in one cook book that I have used and have turned out great. I like this book. I'd been looking for a sort of comprehensive book on pasta for a while, and this certainly fulfills my expectations.

Della Croce provides pretty much all you need to know: a brief history, how to make pasta (but all of them are all'uovo), and really good recipes, it's all there. She also includes a good section on sauces. I made a couple of her recipes already, and they work very well. Most recipes are based on tradition but not really standard: she likes to play around. Also, most ingredients are available at major supermarkets in the US, which can't be said for all cookbooks. The illustrated short sections on, for instance, how to cut up artichokes, are helpful, and they make the book look good. Also excellent: the index--not all cookbooks have ingredients listed in the index. I like the format also, the size of the pages, and the book stays flat when it's on the counter. And I'm probably a sucker for the pictures of all the different kinds of pasta and all the tools used.

Minor criticism: most of the photographs are in the front, where Della Croce gives an overview of types of pasta (fresh, dry, stuffed, etc.) so you have to leaf around a bit. Also, I don't really like all of the photographs: it seems to me that some of them have been enhanced a bit too much, that a lot of color was added. The cover looks that way already: it's saffron tagliatelle, to be sure, but it is a bit too yellow and green. Another thing: what you don't find are menu suggestions--it appears that all of the recipes are "stand alone" dishes.

But despite these minor comments, I am terribly pleased with the book; I'm glad I shopped around a bit and ran into this one. Grazie Julia! ... Read more

Lots of neat ideas for pizzas - they're more gourmet style than anything. Each recipe has a picture which is just wonderful - large, colorful. The recipes themselves don't get me all that excited. Some of them are things that you might have for dinner (like a salad or a chinese stir-fry) and the author put them onto a pizza crust. But there are some interesting ones like the spinach pizza (sauted spinach with garlic, raisins and pine nuts put onto a pizza crust with melted cheese) and some ofthe eggplant recipes are neat. The Athenian pizza is excellent - feta, red onion, mushroom, olives etc baked on the pizza crust. And there are some interesting ones that I'm looking forward to trying that use different pestos. Overall good cookbook with inventive ideas and very pretty presentation that you could easily serve to guests.

The unbelievably beautiful photographs (taken by the writer himself) showed me uses for things I never would have dreamed of putting on a pizza--okra, eggs (sunny side up!), fruits, and a wide variety of vegetables such as cauliflower. McNair is a bit of an ingredient-snob (he seems horrified by the idea that anyone would use anything but a tomato ripped from the vine moments ago to make a pizza). That said, the book will help you unleash your creativity before you stick that Boboli in the oven. A few really ambitious people might actually try to follow one of these recipes, which would be quite an adventure, and one with a delicious conclusion.

I was given this cookbook as a gift, and I love it. I've made 5 of the lasagnas so far: 4 were fantastic and relatively easy to make. I will definitely make those 4 again. And there are at least 6 other recipes that I really want to try.

Overall: lots of recipes that look interesting, high ratio of "successful" recipes in practice . . . that's what makes a great cookbook!

This book is a household standby in the households of at least two third-generation Asian-Americans I know. The recipes are low-fat, flavorful, and authentic, somehow without being too exotic for most American palates. They're generally easy enough for the novice cook, and detailed sidebars tell you how to slice meat, chop onions, etc. "the Asian way". Compared to ethnic cookbooks, which have me scurrying around the city shelling out way too much money on frivolities like sundried tomatoes, the ingredients needed by this book are extremely reasonably priced (as long as you live somewhere on the American coastline). ...
