I love pasta.This book makes cooking with it a breeze.Every recipe has a full color picture of the finished product...plus intermediate pictures of the preparation.The instructions are extremely clear with easy to follow numbers.

The introduction to the book contains pictures with everything you ever wanted to know about pasta.It shows _every_ kind of pasta imaginable.It also explains how to make many of those pastas.Finally, it contains a section on the common ingredients in pasta recipes, what they are why you use them.

This gem of a cookbook, published in 1985, was way ahead of its time. The inside jacket flap reads, "Drawing on the diverse cooking traditions of America, Italy, France, India, Morocco, and the Middle East, the authors have assembed 184 recipes that include not only the classic examples of each cuisine, but also unsual dishes that provide surprising gastronomic rewards." It is an apt description.

The book was published before roasted peppers, balsamic and other flavoured vinegars and gorgonzola cheese were as commonly used in the everyday North American kitchen as they are today. Since it focuses on soups, pastas and stews, with a few side dishes or accompaniments in a chapter at the back of the book, there is a huge variety. The soups range from the traditional, like borscht or mushroom, to chestnut soup with brandy and cream, or cream of lettuce. The stews, pastas, and salads have names that get your mouth watering: chicken tagine with prunes, onions, and almonds; braised short ribs with onions, mustard and white wine; lamb stew with rosemary and capers; penne with black olive purée and ricotta; Bibb, watercress, walnut, olive and Gruyère salad with creamy walnut dressing, etc. The recipes combine ingredients with flair, and the results are delicious, a symphony of flavours and texture. Even their chili recipe includes red wine, coriander and chocolate.

This book is one to be enjoyed when you love cooking and have the time to prepare meals. What is better than the aroma of a hearty soup or stew, simmering for hours on the stove on a wet autumn day? It is a great book for those who have a well-stocked spice rack, and who are not daunted by a long list of ingredients. The recipes are perfect for company, especially if your friends enjoy trying different dishes and ingredients. I'm part Italian, and I know what my Grandmother makes - I think even she would like this book sometimes. Although not all the recipies are to my taste, those are far outweighed by the ones that are. Good news for dairy-okay vegetarians - there's non-meat sauces, and many of the ones that require meat can have vegetable protein substitute instead.

I had a number of questions regarding pasta. Every time I made pasta something different would happen. This book answered my questions and some I didn't even know I had! He teaches you how to make pasta by hand and by many different machines. He recommends trying all of the methods to find what works best for you. I have not tried many of the sauces yet, but I like the variety available. He believes that pasta is not just for Italian dishes and includes sauce recipes for many ethnicities. For novice pasta makers this is the book to have!

This is one of my cookbooks which never gets put away. I proposed over a serving of the Pesto, and now my kids demand the macaroni and cheese. Some of the dishes seem like crazy combinations, but have become pot luck favorites. The pastitisio and the basil lasagne were big hits. No clunkers here.

This is a great little book from one of the greats. Any cook or chef would be very happy to have this. Many international recipes which he describes in an unpretentious way. Very easy and clear. No photos.....He doesn't need them - the titles alone are mouthwatering enough. I wish Amazon would put the contents of the books!
